So, you may think this is cheating because I use the Kary’s Roux Gumbo box mix, but it is LEGIT! The company originated in Ville Platte, and it is amazing! Basically I follow the recipe on the box, with only minor adjustments. I usually cook the trilogy (onion, celery, and bell pepper) down in butter before adding the water and the box mix.
You can make rice to go along with the gumbo, but my favorite way to eat it is with potato salad!
INGREDIENTS
1 onion
1 bell pepper
2 stalks of celery
2 tblsp butter
1 Kary’s Roux Gumbo Mix
8 cups water
2 lbs chicken (preferably a hen)
1/2 lb smoked sausage
INSTRUCTIONS
Saute trilogy (onion, celery and bell pepper) in butter over medium high heat in a large pot. Add 8 cups of water and bring to a boil. Add in the gumbo mix, chicken, and sausage. Cook on medium heat for 40 minutes.
