This is my mom’s potato salad recipe, and it is my favorite. She doesn’t actually follow a recipe, but this is our best guess!
INGREDIENTS
1 bag red potatos
8 boiled eggs
2 tbsp garlic powder
1 bunch green onion
2 cups mayonnaise
2 tbsp yellow mustard
1/4 cup fresh parsley
1/4 tsp cayenne
1 tblsp jalapeno juice (optional)
salt and pepper to taste
green olives
INSTRUCTIONS
Boil and then peel potatoes. Boil and peel eggs. Chop the potatoes and eggs, mashing some to make a thick consistency. Mix mayo, mustard, green onion, parsley, and seasoning. Garnish with green olives.
